Pumpkin Spice Trail Mix Recipe
Ingredients
½ cup honey
¼ cup light brown sugar
2 tsp. ground cinnamon
2 tsp. pumpkin pie spice
1 cup raw almonds, whole
2 cups rolled oats
1 cup unsalted pecan halves
1 cup roasted salted pepitas (shelled pumpkin seeds)
1 cup walnut halves
¼ cup pumpkin puree
2 T. apple juice concentrate
¾ cup dried cranberries
¾ cup currants
DIRECTIONS
- Preheat oven to 350°F. Mix all dry ingredients well. Set aside.
- Mix well together pumpkin puree, apple juice concentrate and honey; pour over dry mixture until well incorporated. Spread evenly onto two baking pans.
- Bake 20-25 minutes, stirring halfway through cook time, until granola trail mix is a golden brown. Cool completely. Stir in cranberries and raisins. Store in airtight container.
