Every 4th of July I bring this dessert to any holiday gathering I’m invited to attend. It’s a sure bet, no brainer favorite. That’s because it’s red, white and blue patriotic, tastes great and low calorie. I let everyone know that the whipped cream is fat free—so the dessert is pretty much guilt free too. (Angel food cake is only about 100 calories per slice, so all-in this dessert is well under 200 calories per slice.) As I buy the cake, it’s quick and simple to make or really assemble. This means you won’t have to spend hours in a hot kitchen this holiday weekend…more good news!
Red, White & Blue Angel Food Cake Recipe
Ingredients
1 Store bought Angel Food Cake
1 pint fresh strawberries, washed and hulled
1 pint fresh blueberries, washed
½ cup cane sugar or equivalent of low calorie sweetener
Two cans or 2 cups fat free whipped cream ¼ teaspoon pure vanilla, if not using non fat whipped cream cans
Directions
- Wash strawberries, hull and gently pat dry. Wash blueberries and gently pat dry. Place berries in a large bowl, sprinkle with sugar; stir to distribute the sugar, and set aside.
- Pour the cream into the chilled mixing bowl, and add a 1-teaspoon of sugar and ¼ teaspoon of pure vanilla. Beat until fluffy with an electric mixer set on Medium speed.
- Cut cake in half sideways. Spread generously with whipped cream and berries. Top with second half of cake. Repeat. Refrigerate until cold ~1 hour. Serve immediately. Refrigerate leftovers.
