We LUV this Pumpkin Spiced Latte Recipe, because it's so easy to make and low calorie and low fat too!
Ingredients
2 T. canned pumpkin
½ tsp. pumpkin pie spice, plus more to garnish
Freshly ground black pepper
2 T. sugar
2 T. pure vanilla extract
2 cups 2% milk
1 to 2 shots espresso, or about ¼ cup coffee
¼ cup low fat real dairy whipped topping
Directions
1. In a small saucepan heat the pumpkin and spices over medium heat, cooking the pumpkin with the pumpkin pie spice and a generous helping of black pepper for 5 minutes. Stir constantly.
2. Stir in sugar cooking until mixture becomes a thick, syrupy consistency.
3. Warm the milk in another saucepan whisking in the vanilla extract until hot making sure it does not boil. Remove from heat and whisk until it becomes your desired frothiness.
4. Make the espresso or coffee and divide between two mugs adding a heaping tablespoon of pumpkin spice syrup and stir well. Then, add the frothed milk. Top with whipped cream and a sprinkle of pumpkin pie spice, cinnamon, or nutmeg if desired.
